This is the most amazing bread recipe, the ultimate comfort food.  It is super easy to make and you can even be creative and try different ingredients like apples and cinnamon or jalapenos.   I hope you enjoy this recipe as much as we do and please feel free to share!  Blessings, Stasia

Ingredients

  • 1 Tablespoon olive oil
  • 1/2 cup minced onion
  • 1/2 teaspoon ground black pepper
  • 2 minced garlic cloves
  • 3 cups flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 cups shredded cheese (we have used Cheddar, Jack, Pepper Jack, Oaxaca and Manchego)
  • 1 bottle or can of beer (12 ounces)
  • 2 Tablespoons melted butter

Method

Preheat your oven to 375 degrees. Heat oil in a small skillet and cook onion, pepper and garlic until the onion is just browned.

Combine all of your dry ingredients into a large mixing bowl. Make a well in the middle and dump the beer all at once into the middle of the well.

Lovely bubbles!

Mix lightly with a fork until just moistened. Spoon the batter into a greased (I use Pam cooking spray) 9 x 5 loaf pan. Drizzle with half of the melted butter. Bake for 35 minutes.

Drizzle remaining butter over the top. Bake an additional 25 minutes or until it is a deep golden brown and a wooden pick inserted into the middle comes out clean. Cool at least 5 minutes before turning out onto a wire rack to cool. We promise you will not be able to wait until this bread is cool before trying it.
